Amazing fruits make amazing cakes...

Best part of baking is to try new recipes. Mostly when we bake a cake, for icing purpose one universal recipe is used which includes basic ingredients like eggs, flour, sugar, baking powder, butter and flavor in it. This does not mean that there is not much to offer regarding cake recipes. There are many cake recipes which involve fresh fruits.
 Last year someone asked me to bake a blue berry cake for him. Interestingly I had no idea that it would be not just difficult but rather impossible to find the blue berries in my city. It was like ‘mission impossible’ to find blue berries for this blue berry cake. I had to visit various places in order to get hold of blue berries but the most interesting part came when I found them in a grocery store and another customer was already trying to get hold of them. The feeling of losing them just before you have them was really upsetting as I knew if I do not get these I will have to wait almost forever to have them again. But luckily that customer changed his mind at the last minute and decided not to buy them. So dear friends I got my required blue berries and I was all set to make another yummy cake but this time fresh fruits were also the part of my recipe.

Someone once mentioned that almost all of my recipes are baked at 180 degree. I agree that’s right but for this recipe you will be setting your oven at 177 degrees.




• Take 4 table spoon unsalted butter at room temperature and beat until creamy

• Add ½ cup sugar into creamy butter and beat for few minutes

• Add 1 egg and ½ tea spoon vanilla extract to it and beat nicely

• Add 1 cup flour and 1 tea spoon baking powder into the mixture and mix well

• Add this batter into a greased pan and spread fresh blue berries on the top of the batter

You will be needing streusel topping for this cake. Ingredients required for this topping are:




• 1/3 cup flour

• 1/3 cup of granulated white sugar

• ½ tea spoon cinnamon powder

• ¼ table spoon unsalted butter (cut into small pieces)

• Mix together all these ingredients in a mixing bowl and spread evenly over the cake batter.

• Bake this batter for about 45-50 minutes

Your delicious blue berry cake is all ready to be served.

This recipe is good enough for 8-10 servings and can be enjoyed with a cup of coffee or tea.
