Sweet taste of carrots with coffee


At my side of the world winters do not stay for much longer period. They come and go in no time. That is why we make sure that we make the best use of it. Winters bring along different flavors such as fogy mornings, winter rains, dry fruits, hot cup of coffee and carrots.
Yes I agree in many parts of the world you can get carrot throughout the year. But where I live carrots come in winter and we make many local desserts with them. One of my dearest friends who love carrot cake once asked me to bake a carrot for her few years back. Before that I never tried carrot for baking. This idea of carrot cake never seemed tempting to me but somehow for my friend I agreed to give it a try. I searched and tried many recipes and finally got this one which I am about to share with you guys. It’s a fool proof carrot cake recipe and you can definitely try it with 100% success as it’s really easy.




Ingredients required for this recipe are




1 cup flour, 1/2 cup sugar ,1/2 cup oil, 3 eggs, few drops vanilla extracts, ½ tea spoon cinnamon powder, 1 tea spoon baking powder and 1 cup shredded fresh carrots.





Now beat eggs for about 8 -10 min with beater on high speed. Add sugar to this mixture slowly and keep beating. When all the sugar has, been added beat for couple of minutes on medium speed and then add oil to it along with few drops of vanilla extract.




In a separate bowl, mix baking powder, flour and cinnamon powder.




Add this mixture into the batter and mix with spatula in clock wise direction. At this stage do not use beater. In the end add carrots into the batter and mix nicely with the help of spatula.


Bake for 20 -22 minutes in a pre – heated oven at 180 degree.
Here! Your delicious carrot cake is ready.


It is enough for 8-9 servings, while you can make 12 medium size cup cakes with this much amount of batter.




At my side of the world winters are about to leave in few days so I am planning to bake it again today.
